Bột ngô trung quốc (tinh bột ngô, tinh bột bắp)

Tinh bột ngô (bột bắp) là nguyên liệu làm bánh được sử dụng trong chế biến thực phẩm từ lâu đời. Thường người ta dùng tinh bột ngô làm đặc, làm chất tạo độ kết dính cho các loại nước sốt, súp, bánh pudding và các loại kem. Ngoài ra, bột bắp còn được dùng làm bột phụ trợ cho đồ nướng, các loại bánh nướng, bánh quy.
Tinh bột ngô còn giúp cần bằng lượng mỡ trong máu, ngăn ngừa bệnh tim mạch.
Tinh bột ngô là đồ làm bánh được sản xuất từ bắp qua quá trình ngâm, nghiền, tách, lọc và sấy khô. Ngô được ngâm trong nước từ 30 đến 48 giờ để lên mem từ từ. Mầm của bột ngô được tách ra từ nội nhũ, hai thành phần đó tách ra khỏ hạt ngô (ngô vẫn được ngâm). Sau đó lọc lấy phần lõi của hạt ngô. Tiếp theo nó được làm khô bởi máy ly tâm(sản phẩm dư thừa qua mỗi công đoạn được sử dụng làm thức ăn gia súc và các sản phẩm khác). Công dụng lớn nhất của tinh bột ngô vẫn là sử dụng để chế biến bánh, kẹo

Chú ý: Cần phân biệt bột ngô nguyên cám và tinh bột ngô,
- Bột ngô nguyên cám là thành phần được nghiền từ hạt ngô, sẽ tạo ra các hạt bột ngô nguyên chất, nguyên cám
- Tinh bột ngô là quá trình phân tích, tổng hợp để tạo ra sản phẩm tinh bột ngô mịn, có đầy đủ tính chất của tinh bột
